Sweet Potato Nachos

Ingredients:

  • 2 large sweet potatoes

  • 1/2 lb ground turkey meat

  • 1 small onion - diced

  • 1 small tomato - diced

  • 1 ripe avocado

  • 4 oz cheddar cheese

  • Sour cream

  • 1/2 packet of taco seasoning

  • 1/2 small lime - juiced

  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 350. Wash and thinly slice your sweet potatoes. Place on a baking dish, lightly spray with oil and bake for 20 minutes. Make sure to flip half way through.

  2. In a pan cook your turkey meat, once fully cooked add in your taco seasoning and continue to cook according to the package.

  3. In a small bowl, combine your avocado, salt, pepper, onion, lime juice and combine. Feel free to add in any cilantro or jalapeño if desired.

  4. Shred your cheese! I always prefer to shred my own cheese but you can totally use pre shredded.

  5. Time to assemble. On the same pan you cooked your sweet potatoes on, add a nice layer of cheese, allowing it to melt. Top with the meat, tomatoes, guacamole and sour cream.

  6. Feel free to add more of your favorite nacho toppings!

  7. Serve and enjoy
