Banana Nut Muffins

Ingredients:
3 over-ripe bananas - mashed
1 egg
1/4 cup unsalted butter - melted
1 tsp vanilla extract
1/2 cup white sugar
1/2 cup brown sugar
1 1/2 cups all purpose flour
1 tsp salt
1 tsp baking soda
1/4 tsp cinnamon
1 cup chopped walnuts
Instructions:
Preheat your oven to 350 degrees and grease your muffin tin.
In a large bowl, whisk together your mashed bananas and melted butter until combined.
Add in your egg, vanilla, sugars, and whisk until all the ingredients are combined.
Add in your flour, salt, baking soda, cinnamon and mix. Be sure not to over-mix, you want to make sure everything is evenly combines and there are no clumps or lumps.
Finally fold in your chopped walnuts.
Using an ice cream scooper or spoon, evenly distribute your muffin mix into your tins. This mixture should make 12 muffins.
Bake for 20 minutes or until a knife comes out clean.
Let cool for 5 minutes and enjoy!
