Sausage & Spinach Quiche

Ingredients:

  • 1 pie crust

  • 5 eggs

  • 1/3 small white onion - diced

  • 2 sausage links

  • 1/2 yellow pepper

  • 2 cups spinach

  • Salt & pepper to taste

  • 2 tsp garlic powder

Directions:

  1. Preheat your oven to 350

  2. Place your pie crust in a cast iron skillet or whatever you would like to cook your quiche in. Make sure it is oven safe! Allow your pie crust to cook for 10 minutes.

  3. In a pan cook your spinach and onion on low-medium heat until slightly soft and the onion is fragrant. Set aside.

  4. In the same pan cook your spinach down till wilted. Set aside. In the same pan cook your sausage. Do not fully cook your sausage. When done, cut into small circles.

  5. In a bowl whisk together your eggs. Add in your salt, pepper and garlic powder. To the same bowl add in your pepper, onion, sausage, and spinach. Mix until combined.

  6. Remove your pie crust. Add in your egg mixture. Cook for 10 - 15 minutes or until the pie crust is golden brown and your egg is fully cooked.

  7. Serve and enjoy!
