Chicken Meatballs with Lemon Orzo

Ingredients:

  • 1 1/2 cups orzo

  • 1 small shallot

  • 1 lemon - juiced

  • 1 tsp garlic - minced

  • Chicken meatballs - you can make your own, but I bought mine pre made.

  • Arugula

  • 1 1/2 cups water

  • Feta cheese

  • Grape tomatoes - I used 10 and cut them into quarters.

  • 2 tbs oil - your preference - I used avocado oil

Directions:

  1. In a pan add in 1 tbs of oil and cook your meatballs until golden brown. Once cooked set to the side.

  2. In a sauce pan, add in your garlic, shallots and oil and cook until fragrant. Once cooked add in your orzo and water and cook until almost all of the water is absorbed and the orzo has grown in size. One cooked, add in your lemon juice. Mix until combined.

  3. In a bowl, place your arugula as the base, add on your orzo, meatballs, feta, and tomatoes. This is completely optional but I also added balsamic glaze over the top and it was DELISH.

  4. Serve and enjoy.
