Chicken Gyro Bowls

Ingredients:

  • 2 cups rice

  • 3 chicken cutlets

  • 1/2 red onion - diced

  • 1 cucumber - diced

  • 1 tomato - diced

  • Feta

  • Tzatziki - if you want to make homemade tzatziki check out my recipe under sides!

  • 4 tbs oil - separate 2 tbs

  • 1/2 tbs butter

  • 1/4 tsp salt

  • 1 tbs pepper

  • 1 tbs onion powder

  • 1 tbs garlic powder

  • 1 tbs oregano

Directions:

  1. In a small saucepan bring water to a boil. Once boiling add in your rice and cook according to the packaging.

  2. In a medium size bowl combine your diced tomato, cucumber, and onion in a bowl. Drizzle in your oil and add the salt. Mix until everything is combined. Set aside.

  3. In a large pan heat your oil and butter. Season your chicken with pepper, garlic powder, onion powder and oregano. Cook cutlets for 3 - 5 minutes on each side or until the cutlet is golden on the outside and the inside is no longer pink.

  4. Let’s assemble!! Cut up your chicken however you would like. In a bowl add a nice layer of rice, add your chicken, feta, cucumber tomato salad, and tzatziki.

  5. Enjoy!
