Chicken Caesar Pasta Salad

Ingredients:
1 bag of salad
3 chicken cutlets
Panko breadcrumbs
1 egg
2 cups of pasta
Croutons
Parmesan cheese
Caesar dressing
Directions:
Bring a small to medium size pot to boil and cook your pasta according to its packaging.
Prep your chicken cutlets. In a small bowl scramble 1 egg. In another small bowl add your breadcrumbs. Coat your chicken cutlets in egg and then breadcrumbs. For this recipe I air fried my chicken cutlets at 400 degrees for 8 minutes. Feel free to fry yours in a pan or cook them in the oven.
In a large bowl add in your washed lettuce, pasta, chicken, parmesan cheese, croutons, and caesar dressing. If you would like to make homemade dressing my recipe is below!
Mix until everything is evenly coated.
Homemade Ceasar Dressing:
Ingredients:
1/2 cup mayo
2 tsp dijion mustard
1/2 tsp anchovy paste
1 tbs lemon juice
1 tsp minced garlic
Salt and pepper to taste
Directions:
In a medium size bowl add in all the ingredients. Whisk until everything is combined. Feel free to give it a taste and add extra of whatever your taste buds are craving!
