Mango Lime Salsa

Ingredients:

  • 2 ipe mangos, diced

  • 1 bell pepper (any color, I used red) diced

  • 1/4 cup red onion, finely chopped

  • 1 jalapeño, seeded and minced

  • 1/4 cup fresh cilantro, chopped

  • Juice of lime

  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the diced mango, diced pepper, chopped red onion, minced jalapeño, and chopped cilantro.

  2. Squeeze fresh lime juice over the mixture and gently toss to combine.

  3. Season with salt and pepper to taste.

  4. For the best results let the flavors meld together for about 15 to 30 minutes in the refrigerator before serving.
